En estas c\u00e1maras, a una temperatura m\u00e1xima de 5\u00baC y una humedad relativa que puede llegar al 95%, los jamones van perdiendo agua, compactando su carne y favoreciendo su conservaci\u00f3n.<\/p>\n<p>Desde la temperatura y humedad a la que se curan los jamones hasta el cumplimiento de las normativas sanitarias o los controles de la gen\u00e9tica y alimentaci\u00f3n de los cerdos, la tecnolog\u00eda se ha convertido en una herramienta crucial, si bien el factor humano y el buen hacer tradicional no tiene sustituci\u00f3n posible.<\/p>\n<p>Tremendo espect\u00e1culo adentrarse en la penumbra de los secaderos naturales, permeables al aire puro de las sierras. Mientras que en los secaderos industriales la tecnolog\u00eda lo pone f\u00e1cil a la hora de controlar estos factores, en los secaderos naturales todo depender\u00e1 del buen hacer de los maestros jamoneros, que habr\u00e1n de ingeni\u00e1rselas con m\u00e9todos como abrir o cerrar las ventanas, para controlar la climatolog\u00eda externa.<\/p>\n<p>Envejecimiento en bodega: Al llegar el oto\u00f1o, los jamones pasar\u00e1n de los secaderos a las bodegas donde, ya a temperaturas m\u00e1s frescas y estables, culmina el proceso de envejecimiento.<\/p>\n<\/div>\n<\/div>\n<div Por eso contamos con nuestras propias granjas de cr\u00eda tanto en la zona de Guijuelo como en el sudoeste de la pen\u00ednsula ib\u00e9rica\u201d<\/em><\/strong><\/p>\n<p>As\u00ed nuestros cerdos 100% ib\u00e9ricos pueden tambi\u00e9n campear y disfrutar de la campa\u00f1a de bellota en nuestras propias dehesas donde disponen de espacio suficiente para un correcto desarrollo, alimentaci\u00f3n y ejercicio. El cerdo debe alimentarse con los mejores recursos naturales y su dieta debe ser cuidada con esmero.<\/p>\n<p>El tipo de alimentaci\u00f3n que recibe el cerdo durante toda su vida en uno de los criterios utilizados para clasificar los jamones ib\u00e9ricos. As\u00ed pues, encontramos tres tipos de jam\u00f3n ib\u00e9rico:<\/p>\n<p><b>De bellota<\/b>: el jam\u00f3n ib\u00e9rico de bellota es el de mayor calidad, el primero en la clasificaci\u00f3n dentro de los jamones ib\u00e9ricos, por as\u00ed decirlo. El cerdo ha sido criado durante toda su vida en la dehesa y se alimenta de bellotas as\u00ed como de otros recursos naturales que se pueden encontrar en la dehesa.<\/p>\n<p>Es por esto que<strong>\u00a0la dehesa<\/strong>\u00a0deber ser un lugar cuidado, un\u00a0<strong>ejemplo de sostenibilidad<\/strong>\u00a0en el que se respete el medio ambiente y exista una explotaci\u00f3n sostenible de los recursos humanos.
