En \u00abCharcuter\u00edas Pascual\u00bb, maestros jamoneros.<\/p>\n<p>Deshuesar un jam\u00f3n, ya sea un jam\u00f3n tradicional, un jam\u00f3n de Teruel, un jam\u00f3n Ib\u00e9rico, o bien el deshuesado de una paletilla de cerdo blanco o el deshuesado de una paletilla de cerdo Ib\u00e9rico, es un arte que transciende de un maestro jamonero a otro. Seg\u00fan las zonas el deshuesado del Jam\u00f3n es distinto quiz\u00e1 siendo Zaragoza prestigiosa en el bello arte del deshuesado del jam\u00f3n se realice de una forma distinta a otros lugares, donde se deshuesa dejando el jam\u00f3n en tres partes. Maza, contra maza, y punta, las cuales tienes cualidades y sabores distintos, mientras que en otros puntos de Espa\u00f1a , el deshuesado del jam\u00f3n se realiza con una herramienta llamada gubia y el jam\u00f3n queda deshuesado en la pieza entera.<\/p>\n<p>A la hora de deshuesar nos podemos encontrar con <strong>dos modalidades<\/strong>. La <strong>primera<\/strong> es en la que se <strong>deshuesa todo el jam\u00f3n<\/strong>, ya sea para venderlo entero y deshuesado o para trocearlo en tres partes (maza, contramaza y punta) para su posterior venta envasado.<\/p>\n<p>La <strong>segunda<\/strong> opci\u00f3n es la de <strong>deshuesar el jam\u00f3n parcialmente<\/strong>, es decir, tan solo quitando el hueso de la cadera. Muchos de vosotros os ester\u00e9is preguntando si no es mejor y mas r\u00e1pido cortar jam\u00f3n sin el hueso de la cadera \u00bfverdad?. Pues bueno, hasta cierto punto si, os explicamos.<\/p>\n<p>Cuando empiezas a cortar el jam\u00f3n por la zona de la maza (por ejemplo), el hecho de no tener el hueso de la cadera ayuda mucho a realizar el corte, ya que no tenemos nada que nos moleste. Pero \u00bfque pasa cuando le damos la vuelta al jam\u00f3n? Pues bien cuando le damos la vuelta al jam\u00f3n y pretendemos cortar la zona de la contra-maza, no tenemos nada que nos sirva de apoyo y solo tenemos un trozo de jam\u00f3n colgando. Si no quitamos el hueso de la cadera, cuando realizamos el corte de la contra-maza, este mismo hueso nos sirve de apoyo para aguantar el jam\u00f3n que nos queda por cortar.<\/p>\n<figure
