{"id":170,"date":"2014-10-25T16:07:17","date_gmt":"2014-10-25T16:07:17","guid":{"rendered":"http:\/\/www.jamonespascual.com\/blog\/?p=170"},"modified":"2014-10-25T16:07:17","modified_gmt":"2014-10-25T16:07:17","slug":"el-jamon-renueva-colores","status":"publish","type":"post","link":"https:\/\/www.jamonespascual.com\/blog\/el-jamon-renueva-colores\/","title":{"rendered":"El jam\u00f3n renueva colores"},"content":{"rendered":"<div id=\"cuerpo_noticia\" class=\"cuerpo_noticia\">\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>A la hora de comprar jam\u00f3n ib\u00e9rico, el consumidor podr\u00e1 distinguir su categor\u00eda mediante un c\u00f3digo de colores. <a href=\"http:\/\/www.lamoncloa.gob.es\/ConsejodeMinistros\/index.htm\" target=\"_blank\"><span style=\"text-decoration: underline;\"><span style=\"color: #0066cc;\">El Consejo de Ministros<\/span><\/span><\/a> ha aprobado este viernes por decreto una nueva norma de calidad para la carne, el jam\u00f3n, la paleta y la ca\u00f1a de lomos ib\u00e9ricos.<\/p>\n<p>El Ejecutivo ha introducido las tonalidades para la clasificaci\u00f3n de los productos, que incluir\u00e1 la denominaci\u00f3n de venta y la indicaci\u00f3n del tanto por ciento racial del animal. Los productos bellota estar\u00e1n etiquetados de negro, en el caso de que el jam\u00f3n sea de raza 100% ib\u00e9rica, y de rojo, cuando la carne sea de raza parcialmente ib\u00e9rica. Para los jamones de cebo de campo ib\u00e9ricos, la etiqueta ser\u00e1 verde; y para los de cebo, blanco.<\/p>\n<p>Adem\u00e1s, de las cuatro categor\u00edas por alimentaci\u00f3n que exist\u00edan hasta ahora \u2013de bellota o montanera, de recebo, de cebo de campo y de cebo\u2013 quedar\u00e1n tres: de bellota, de cebo de campo y de cebo. Desaparece la categor\u00eda de recebo. Y ser\u00e1 obligatorio para el productor indicar en la etiqueta el porcentaje de pureza cuando no se trate de cerdos 100% ib\u00e9ricos.<\/p>\n<p>La idea es limitar la utilizaci\u00f3n de t\u00e9rminos que puedan inducir al error a la hora de comprar. De este modo, los nombres, logotipos y s\u00edmbolos que aludan a aspectos relacionados con la bellota o la dehesa se reservar\u00e1n exclusivamente para la designaci\u00f3n \u00abde bellota\u00bb.
