Curada en secaderos naturales, al cobijo de los picos m\u00e1s altos del Pirineo.<\/p>\n<p>En su elaboraci\u00f3n se emplea carne magra de cerdo (un m\u00ednimo del 70%) y panceta, papada o tocino (nunca puede sobrepasar el 30%). En este tiempo a formado a varios jamoneros y charcuteros, asi como la elaboraci\u00f3n de su propio jam\u00f3n mimando todo su proceso desde el principio de una forma artesanal y cuidada. Gran conocedor de este arte destaca como cortador de jam\u00f3n y deshuesador. En este tiempo a formado a varios jamoneros y charcuteros, asi como la elaboraci\u00f3n de su propio jam\u00f3n mimando todo su proceso desde el principio de una forma artesanal y cuidada. Gran conocedor de este arte destaca como cortador de jam\u00f3n y deshuesador.
