{"id":107,"date":"2014-10-19T19:13:40","date_gmt":"2014-10-19T19:13:40","guid":{"rendered":"http:\/\/www.jamonespascual.com\/blog\/?p=107"},"modified":"2014-10-23T06:20:22","modified_gmt":"2014-10-23T06:20:22","slug":"jamones-pascual-los-jamones-ibericos","status":"publish","type":"post","link":"https:\/\/www.jamonespascual.com\/blog\/jamones-pascual-los-jamones-ibericos\/","title":{"rendered":"Jamones Pascual, Los Jamones Ib\u00e9ricos"},"content":{"rendered":"<p>En relaci\u00f3n con la raza del animal que constituye la materia prima, se establecen dos designaciones:<\/p>\n<p>\u2022 Ib\u00e9rico puro: procedente de madre y padre ib\u00e9ricos puros, inscritos en el libro geneal\u00f3gico.<br \/>\n\u2022 Ib\u00e9rico: procedente de madre ib\u00e9rica o ib\u00e9rica pura.<\/p>\n<p>En relaci\u00f3n con la alimentaci\u00f3n suministrada al animal en el periodo inmediatamente anterior al sacrificio, se establecen cuatro designaciones:<\/p>\n<p>\u2022 De bellota o terminado en montanera<br \/>\n\u2022 De recebo o terminado en recebo<br \/>\n\u2022 De cebo de campo<br \/>\n\u2022 De cebo<\/p>\n<p>Con el objetivo de adaptarnos a las directrices establecidas por la norma de calidad se han implantado sistemas que aseguran la trazabilidad de los productos.<\/p>\n<p>Esto supone un riguroso control desde el nacimiento de los animales hasta la venta de los productos elaborados.<\/p>\n<p>El proceso de etiquetado para los Jamones, Paletas y Lomos garantiza una informaci\u00f3n completa y veraz sobre la naturaleza y caracter\u00edsticas de los productos que adquiere el consumidor.<\/p>\n<p>\u00abEl Jam\u00f3n Ib\u00e9ricoes especial, porque se controla el origen de la materia prima,<span class=\"Apple-converted-space\">\u00a0<\/span><br \/>\nse supervisa el proceso de elaboraci\u00f3n al detalle y se garantiza la calidad del producto final\u00bb<\/p>\n<p>Adem\u00e1s, la calidad y el rigor aplicado al proceso industrial son la constante que seguimos a la hora de tratar nuestros alimentos: pieza a pieza, con mimo; Gran conocedor de este arte destaca como cortador de jam\u00f3n y deshuesador.
